Tomato Basil soup

This creamy tomato is soup is perfect for chilly weather. To me this is comfort food and hits the spot. Also don't forget to pair this delicious soup with a toasty grill cheese.

Ingredients
10 roma tomatoes
6-7 cloves of garlic
1/2 red bell pepper
1/2 jalepeno (optional)
1/2 red onion
16 oz tomato sauce can
1 1/2 tsp of basil paste or 3 tsp fresh basil
1 cup of low sodium beef stock or veggie stock
1/4 cup of heavy cream
Salt to taste
Olive oil for cooking
Garlic powder (optional)
Directions
Preheat oven to 400 degrees
On a baking sheet add cut up tomatoes, garlic, bell pepper, onion, and jalapeno
Drizzle with olive oil and tsp of salt and roast for 25-30 min.
When the tomatoes are done blend everything in a blender.
Add the can of tomato sauce in a pot and basil paste, then add the tomato mixture you just blended. Add the stock, let the soup simmer and add the heavy cream, garnish and serve with your favorite toppings or grilled cheese.
