Rainbow Salad



This salad is healthy, filling, nutritious and above all delicious. It's topped off with my tahini green goddess dressing.

The best part of this salad you dont have to be precise about measurements !


Ingredients

1 chopped orange bell pepper

1 English cucumber chopped

1/2 of a medium red onion chopped

1/4 cup of toasted pinenuts

2-3 roasted beets cubed

1 can of garbanzo beans

2 cups of chopped red cabbage

3/4 cup of pomegranate seeds

1 1/2 cups of sliced grape tomatoes

1/3 cup of feta cheese

2-3 stalks of celery chopped


Tahini Green Goddess Dressing

1/3 cup of tahini

1/4 of a jalapeño

Juice of a lime

Juice of a lemon

1/4 cup of olive oil

2-3 garlic cloves

1 heaping tbsp of honey Dijon mustard

A handful of cilantro

A little water to thin the dressing

Salt to taste


Directions

After you have chopped everything for the salad. Add all the ingredients of the dressing to a biender and blend. Also you can adjust to more lemon or lime depending how much juice the lemon/limes have. Also add a tsp of water at time to thin dressing to liking.

Best thing of this salad you can store it in the fridge in a glass container and will last a few days! Enjoy!
