This cake is perfect for fall, it's warm and feels like a hug to the soul!
Ingredients
1 1/4 cups of unbleached flour, I always use king Arthur.
3/4 cup of almond flour.
1/2 cup raw sugar
1/2 cup of brown sugar
2 eggs
1 stick of salted butter room temperature
1/4 cup of olive oil
1 tsp of vanilla extract
1/4 tsp of almond extract
1 1/2 tsp baking powder
1 1/4 tsp of pumpkin spice
2 tbsp milk of your choice
2 apples of your choice
Homemade or ready whip cream and top off with cinnamon
Directions
Preheat oven to 350 degrees.
Beat sugar, eggs and oil together in a kitchen aid or use hand mixer. Add in vanilla and almond extract. Then add in the flours, pumpkin spice and baking powder. Mix well then add milk. You can peel the apples or not, dice the apples and fold them into the batter with a spatula.
Grease an 8 inch cake pan and pour the batter.
Bake for 30-40 minutes depending on your oven.
When cake is fully cooked, let it cool then flip and enjoy with whipcream and cinnamon. Ofcourse don't forget that cup of coffee!
