I love making any cookie into a healthier version. If you dont already know I have 4 kids and a pair of younger twins and they love bananas a little too much, so sometimes they just open so many at once and not eating the rest. I just save it in the fridge to use for my next recipe. This recipe has almond flour, white whole wheat and oats, it's very simple you can't mess it up.
Also these cookies have the right amount of sweetness, from the natural sweetness of the strawberries and bananas so you wouldn't need much sugar.

Makes 2 dozen cookies
Ingredients
1 1/4 cups of Almond flour
1 cup of white whole wheat flour
1/3 cup of oats
1/2 cup of brown sugar
1 egg
1 tsp of vanilla
1 tsp of baking powder
1/2 tsp baking soda
1/2 cup of peanut butter crunchy or smooth
1 cup of mashed banana
1 cup of chopped strawberries
1 cup of bittersweet chocolate
1/2 cup of chopped pecans (optional)
Directions
Mix the egg, sugar, vanilla, mashed banana, and peanut butter together, then add the dry ingredients mix well with a spatula, then fold in the chocolate, strawberries and pecans
Use a spoon to scoop the batter and spoon them in to cookies.
And bake them in a 375 degree preheated oven for 10-12 min.
