Ingredients
3 bananas
2 cups of oats
1/4 cup of cashew milk (milk of choice)
3 eggs
2 tsp vanilla extract
2 tsp baking powder
1/3 cup of ricotta cheese
1/4 tsp of cinnamon
1/3 cup of pecans
Coconut oil for cooking
Directions
In a blender blend all the ingredients together except the pecans. Add pecans and mix with a spatula. Heat a skillet on medium and add a tsp or 2 of coconut oil and cook the pancakes. Serve warm with a drizzle of honey or syrup or as is with some fruit!
