Pumpkin bread

Fall season is automatically pumpkin season. All you see is pumpkins everywhere. The smell of pumpkin spice on every corner, which makes pumpkin on our mind all fall even winter long. The aroma of cinnamon, nutmeg, allspice and ginger just feels like a warm hug. So this is pumpkin bread kind of healthified, im sharing the recipe with all purpose flour but feel free to substitute half of that flour with oat flour, and trust me you do not need to buy that pricey oat flour just add it in a blender and in a few seconds you have made your own flour!

Ingredients

1 banana 1/2 cup apple sauce 1 cup of pumpkin 1 3/4 cups of flour 2 eggs 1/4 cup of coconut oil 1 1/2 tsp of baking powder 1/4 tsp of baking soda 1/2 cup - 3/4 cup of brown sugar 1 tsp of pumpkin spice 1/2 tsp of cinnamon 1/2 cup of pumpkin seeds 1 tsp of vanilla extract

Directions Mash the banana, mix in apple sauce, 2 eggs, pumpkin, brown sugar, coconut oil and vanilla. Then mix the dry ingredients, and add gradually to the wet mixture. Add in the pumpkin seeds and garnish the top before baking. Spray a loaf pan then add the mixture and bake in a preheated oven at 350 degrees for 50-55 min till toothpick comes out clean.
