These pot de cremes sound fancier then they are, all though they are extremely addictive! These are so decadent and rich, you and your guests will be impressed! Best thing is this recipe does not require you to cook them in a water bath. This recipe only requires you to cook them on the stove then let it set in the fridge and top with your favorite toppings.
Ingredients
1 cup heavy cream
1/2 cup whole milk
4 egg yolks
1 cup bittersweet chocolate chips
4 tbsp sugar
Pinch of salt
Servings
Makes 5 pot de cremes in 4 oz ramekins
Directions
Heat milk and whole milk together on stovetop.
While milk is heating up whisk yolks and sugar till silky smooth then add vanilla and salt.
Dont let milk simmer just make sure its real hot. When milk is ready slowly laddle milk into egg mixture while you are whisking the eggs.
Add another laddle of milk, keep whisking, then add the mixture to the pot, and keep whisking till milk is thickened. Its ready when milk sticks to the back of the spoon.
Turn off the heat and add chocolate chips. Whisk good, then strain the pot da creme through a strainer for any lumps. Laddle in ramekins and refrigerate for atleast an hr or hr and half.
Serve with fruit or whipcream on top!
