Pecan Tassies

If you're from the south you already know what I'm talking about, these are little gems that dissappear in seconds.

Coming from the south I been really home sick, and miss my Georgia fresh pecans, so I sent my husband to the local grocery store to pick some pecans up and lucky me they had some pecans from Valdosta Ga, which had my name on it, they also had pecans from California but are they really pecans if they are not from Ga.

So I was day dreaming of a pecan pie but I usually prefer making it during the fall especially for Thanksgiving, so i thought of just making little tartlets or mini tassies.





These are little bites of heaven in your mouth and the dough is so simple and the filling couldn't be more easy, the most waiting part is being patient for the dough to chill.





After the dough is chilled assembly is so quick and easy to make. When they are done you wouldn't be able to have just one!

20 mini tassies

20-25 min

Ingredients

  • 1/2 cup unsalted butter

  • 3 oz cream cheese

  • 1 cup all purpose flour

  • 1 tsp vanilla

Filling

  • 2 tbsp melted butter

  • 3/4 cup brown sugar

  • 1 egg

  • 1 tsp vanilla extract/vanilla bean paste

  • 1 cup of pecan halves finely chopped

Instructions

Mix butter, vanilla and cream cheese till incorporated then add flour and mix till forms into a ball, then refrigerate covered for 30 min.

For the filling mix everything together except the pecans then whisk really good, after everything is mixed well add chopped pecans and mix.

Take the chilled dough and divide into 20 small balls and put them in a mini muffin tin and press them making a small well for filling.





After you're done bake them in a 350 degree preheated oven for 20-25 min, and when done take them out, let them cool and enjoy!
