Peanutbutter cookies with dairy free icecream

Some days our sweet tooth is just calling our name yet we dont want to over indulge to maintain a healthy lifestyle. Well these cookies are perfect, they are sweet enough to satisfy, yet light enough to not feel guilty.
If you really feel like indulging, you can also scoop a tbsp of dairy free icecream, that I will also be sharing, to make it into an icecream sandwich!

The icecream is so simple and made with only 4 ingredients. Frozen bananas, peanut butter, cocoa powder and vanilla.

Ingredients for the cookies
1 cup of peanut butter, I used half creamy and half crunchy
1 egg
1 1/2 cups of almond flour
1 tsp of vanilla extract
1 tsp of baking powder
1/3 cup of honey
Pinch of cinnamon
Directions
Preheat oven at 350 degrees. Next mix all the ingredients together with a spatula till everything is well combined.
Then get a small cookie scooper and scoop on to pan and using a fork to push them down and design.

Bake at 350 degrees for 5-7 min, watch them carefully they can easily over cook.
If you make the cookies bigger add a couple more minutes to the baking time.
Cool and enjoy, and if you want add a scoop of icecream and make it into a sandwich.

Ingredients
3 bananas
2 tbsp of peanutbutter
2 tsp of cocoa powder
1 tsp of vanilla extract
Directions
Slice bananas into rounds, place the bananas on a baking sheet with parchment paper. Let the bananas freeze for 2 hours.
After frozen blend the bananas, peanutbutter, vanilla, and cocoa powder together, you can eat it right away or place it back in the freezer for 20 min so it can be easier to scoop into the cookies. Serve right away or place rest.of cookie sandwiches in the freezer.
