Mamas Orange Cake

If you love citrus this cake is for you, I have to give credit to the most important person in my life, the person who made me the person I am today, the person who sacrificed everything. My mother, growing up always did so much, and still does till this day, on top of that she was always in the kitchen, if she wasn't cooking she was baking to make sure we had our breakfast ready for the next morning; always filling up cakes with different fruits and nuts just so me and my siblings could get all our nutrients, one time she packed a cake with so many different fruits that it never finished cooking through, we joke about it till this day.

I always joked with my mom how I'm just going to get everything premade and not bother with being in the kitchen, yet here I am today, doing the exact thing she did, I always wonder and till now wonder how she did what she did with 6 children! May God bless all our mothers hard work.

The making of this cake is simple, and you can add buttercream or not but I will save that for another post.

25-30 min

Ingredients

1 cup of vegetable or corn oil

1 cup of yogurt or milk

1 1/2 cups of sugar

4 eggs

3/4 cup of freshly squeezed orange juice

3 1/2 tsp baking powder

1 tsp of baking soda

1 tsp vanilla extract/powder

3 cups of flour

Zest of 3 oranges

Makes three 8 inch layers

Or two 9 inch layers

Directions

Mix eggs and sugar till fluffy, add oil, yogurt juice, mix well then gradually add the rest of the ingredients. Then add the zest of the oranges.

Mix everything together, pour batter in a buttered dish and bake @350 for 30-35 minutes depending on how many layers or how big or small the pan is that you are using.

Let cake cool and enjoy.
