Somedays we just need something quick and simple and this one pot pasta is the way to go, you get your protein, carbs and veggies. This pasta is creamy and delicious and a crowd pleaser and is on the tables in less than 30 minutes! Prep time 5 min Cook time 20 min Ingredients 1 box of penne pasta (whole wheat or regular) 32 oz carton of chicken stock 8 oz parch of mushrooms sliced 1 8 oz pint of heavy cream 2 cubed chicken breast 1 tsp of garlic powder 1/2 tsp of nutmeg Salt to taste 1 - 2 tsp if garlic herb dry rub (optional) 1 tsp dry thyme 1 cup of shredded parmesan cheese 4-5 cloves of crushed garlic 1 tbsp of butter 2 tbsp of olive oil 1 16 oz package of frozen or fresh broccoli florets Directions Season the cubed chicken with garlic powder, salt, thyme, and garlic herb dry rub. In a heated pot add butter and oil, then add seasoned chicken in hot oil for 5 -7 minutes, then add the crushed garlic and mushrooms saute for 2 min. Add the penne pasta, mix everything well, add chicken stock and cover. When pasta is almost done add the broccoli florets, heavy cream, nutmeg, taste if it needs more seasoning. Add the parmesan on top and serve. Top with more cheese in plate if desired.
