I remember my friend had tagged me in a recipe on social media and I was obssessed, I wrote down and saved the recipe, you will fall in love with these muffins they are so light and have that hint of a citrus note from the orange and a little fruitiness from the olive oil. This recipe is so versatile that you can switch it up with lemon, or you can just your favorite berries which in my case I have made them with blueberries!

Ingredients
1 cup of sugar
1/2 cup of fresh orange juice
4 large eggs room temp
1/4 cup extra virgin olive oil
1/4 cup of nonfat Greek yogurt or whole milk
1 tsp of vanilla extract, 1 tsp almond extract
1 large zested orange
1 cup almond flour
1 1/4 cups of all purpose flour
2 tsp of baking powder
1/2 tsp salt
1/2 sliced toasted almonds
Powder sugar for dusting
Directions
Sift almond, all purpose flour, baking soda, and salt together and set aside. Mix wet ingredients together, then slowly add dry ingredients till it's well incorporated. Then fold in the almonds at the end.
Bake in a 325 degree preheated oven for 20 min.
Cool them dust some powder sugar and serve.
