Lemon Ricotta Cookies

These cookies are so addicting, it will be hard to stop at one! I am lemon obsessed with anything and these cookies are just perfect!


Ingredients

2 1/2 cups of all purpose flour 1 tsp baking powder 1 softened stick of salted butter 2 cups sugar 2 eggs 1 15 oz container wholemilk ricotta 1 zested lemon 3 tbsp of lemon juice Handful of blueberries (optional) Glaze 2 cups powder sugar 4 tbsp lemon juice 1 zested lemon Directions Preheat oven to 375 degrees. In a mixer add butter, eggs and sugar. Mix till smooth. Add the ricotta cheese and mix. Then add baking powder, lemon zest, lemon juice then slowly add flour. Turn of mixer and add blueberries (optional) and mix. Make sure with a spatula to clean edges and make sure everything is incorporated. Then with a cookie scoop, scoop cookies on parchment paper, leaving an inch and half between the cookies. And bake for 15 min. Let them rest on a cooling rack (important) then add the glaze when cookies are cooled. Glaze Just whisk powder sugar, lemon zest, and lemon juice together. Add lemon juice slowly you always add more but not take out.
