Lemon Kale Salad

This lemon kale salad has to be one of my top favorite salads. Its hearty, tangy, and delicious, also its filled with nutrients to feed your soul! The best part about this salad you can prepare it ahead of time because kale can handle the dressing unlike spinach or lettuce that will wilt immediately. You can have this salad as a side dish or add some protein and make it a meal.

4 servings

Prep time

15 minutes

Ingredients

4 cups chopped kale

1 big lemon

3-4 tbsp of olive oil

1 clove of crushed garlic

1/4 cup of shredded parmesan cheese

1/2 tsp of salt or to taste

Croutons

3/4 cup of your favorite bread (I recommend a hearty brand like French or ciabatta)

1 tsp dry herbs

1 tbsp of butter

Instructions

Mix kale with 1/2 lemon and massage them together to soften the kale, then mix the other 1/2 of lemon, salt, olive oil, and parmesan and dress the kale.

For the croutons melt butter with dry herbs and toast the bread in a skillet together.

Top the salad with cooled croutons and parmesan cheese and serve!
