Anything blueberry lemon count me in, it's one of my favorite combos of all time, other then the magical combo of raspberry and dark chocolate but well get to that in a different post! This cake tastes like summer its lemony, sweet, fruity, a little tang, everything you want from summer! It's more on the fluffy side then dense which I love and is a crowd pleaser, you also can substitute your favorite berry.
Also let's not forget the lemony glaze that just makes everything just perfect!

Ingredients
1 cup of coconut oil
2 cups of sugar
2 eggs
1 tsp vanilla
2 3/4 cups of all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/4 cup of buttermilk
Zest of 2 lemons
2 cups of blueberries
2 tbsp lemon blueberry jam (optional)
Glaze
3 tbsp of lemon, 1 cup powder sugar
Directions
Mix sugar and eggs till fluffy then add coconut oil vanilla and mix, then add the rest of the dry ingredients and add the zest of 2 lemons and the the 2 tbsp of blueberry jam, then mix in the blueberries, make sure you add a spoon of flour to the blueberries so they don't sink to the bottom of the pan. Grease bundt pan add the batter and bake at 350 degrees for 45 min.
After cake is done cool and add the glaze to the cooled cake and serve.
Just a reminder while making the glaze add a tbsp of lemon at a time don't worry it seems to thick but as you keep whisking it will become more runny.
