Knafa is a famous middleeastern dessert that everyone absolutely loves, its made with shredded phillo dough or a semolina crust, stuffed with sweet cheese and baked till that crust is crispy and the cheese is oozy. Then topped off with a sugary simple syrup with a hint of a floral taste. I mean just talking about it is making me crave one about now.
One day i had a pack of opened shredded phillo dough left after i had mad knafa and i didnt want it to go to waste so I came up with this genius sweet idea to make a knafa parfait, a little modern twist on the original knafa. This parfait is layered with ishta (clotted cream), and then topped off with crispy phillodough. And please make your own ishta it makes the parfait the store bought one wont taste the same. The ishta recipe im sharing with you is a simplified way to make it.

Ingredients
2 cups shredded phillo dough
2-3 tbsp unsalted butter
Pinch of tumeric
Ishta (clotted cream)
3 pieces of sliced bread
2 tsp of orange blossom water
3 cups of whole milk
1 tbsp sugar
3 tbsp of cornstarch
Simple syrup (ater)
1 cup water
1 cup sugar
2 tsp of orange blossom water
Garnish
Rosepetals
Pistachios
Directions
In a sauce pan add 3 cups of milk and tear the 3 pieces of bread in the milk and let it soak for atleast an hour. The bread can be white or honey wheat I have used both and comea out the same.
After an hr or two, add 3 tbsp of cornstarch, and1 tbsp of sugar. Whisk well and turn the stove on to medium heat and keep whisking till milk thickens, add the orange blossom water and whisk. When the mixture gets thick turn the heat off and remove off stove, it will continue to thicken while cooling down.
For the knafa part melt the butter in a pan add tumeric for color then add the phillo dough, make sure you cut it up to small pieces. Toast the phillo dough on the first side, make sure not to mix, you need it to be fully toasted before you flip it to the other side.
When phillodough toasts flip and wait till the other side toasts then turn off heat and let it cool.
Make sure you also make your simple syrup in advance add the ingredients and let it simmer for 8-10 min.
When everything has cooled just layer your knafa parfait as you would with a regular parfait, isha, phillodough, ishta, phillodough etc. Add your garnishes and pour syrup before serving.
