Lemon Blueberry Granola cups

I kinda have an obsession with blueberries and lemon something about this combo is magical to me, my hubz even found the perfect blueberry lemon jam at target, which in his words it had my name on it, which now i dont always have to make from scratch, So I made these healthy granola cups with non fat Greek yogurt flavored lightly with honey and the blueberry lemon, topped with more jam and finished off with blueberries and lemon zest bc why not! These legit feel like a dessert but o so good for you! These are perfect for a breakfast on the go, have it with a cup of coffee, or even for suhoor!

Ingredients

2 cups rolled oats toasted

3 tbsp shredded coconut 1/4 cup of honey 2 tbsp of brown sugar 3 tbsp of melted coconut oil or butter 3 tbsp of your favorite nut butter 1 tsp of vanilla 1 tsp of cinnamon Directions Toast oats in a 400 degree oven for 7-10 min just to to dry them up and get them toasted Melt butter or cocunut oil, then mix in the rest of the ingredients together. Spray a muffin tin with cooking spray and scoop 2 spoons in a muffin and press it down the muffin cup. Then bake again for 5-6 at 375 degrees watch them so they don't get burned Let them cool then put the muffin tin in the fridge for an hr or 2 till they cool and set For filling 2 cups plain non fat Greek yogurt 1 tsp vanilla bean paste or 2 tsp of vanilla extract Drizzle honey to your preference 1 heaping tablespoon of lemon blueberry jam (optional) Fill the granola cups and top with blueberry jam blueberries and lemon zest (optional)
