Creamy Sundried Tomato Pasta

Ingredients

1 lb of spaghetti

1 cup of sundried tomatoes

2 cups of baby spinach

4-5 mini bellpeppers sliced

1/2 of a chopped onion

5 cloves of chopped garlic

1 1/2 cups of heavy creamy

1 cup of grape tomatoes (optional)

1 lb of cubed chicken

1/2 tsp of paprika

1/2 tsp of pepper

1 tsp of better then bouillon (chicken)

3/4 cup of shredded parmesan cheese

Salt to taste

1/4 tsp of nutmeg

Olive oil for cooking

1tbsp of butter


Directions

In a deep saute pan, add butter and a drizzle of olive oil. When the pan is heated well add the chicken and sear on both sides. Add salt, pepper and paprika to the chicken. Then add the onions, garlic, bell peppers, better then bouillon and sundried tomatoes. If they are not slices, slice them first. Saute for a couple minutes then add the grape tomatoes. Add the heavy cream, spinach, nutmeg. Let the sauce simmer add half the parmesan cheese in the sauce. Add the spaghetti. Then add the rest of the parmesan cheese. Mix well and serve.
