Cinnamon Pancakes

Ingredients

2 1/2 cups of unbleached all purpose flour

1 tsp cinnamon

3 tbsp brown sugar

3 tsps baking powder

1 1/2 cups lowfat buttermilk

1 1/2 cups milk

1 egg

4 tbsp melted salted butter

1 tbsp vanilla

Oil/butter for cooking


Directions

In a big measuring cup add all of the wet ingredients mix well and set aside. In a separate bowl mix all your dry ingredients. Pour your wet ingredients slowly into the dry ingredients. Its ok to keep the batter a little lumpy keeps the pancakes fluffy.

In a skillet add a little of oil or a mixture of oil and butter and cook for a min on each side or till done. Serve warm with maple syrup and your favorite toppings.
