Chicken Pot pie

Chicken pot pie is one of those dishes that is so comforting. I have to give my husband credit for introducing me to this dish, being a southern raised boy anywhere he saw pot pie on the menu he had to order it, then I decided one day I'm going to impress him and make it for him and now we both are obsessed with this dish. When I think of comfort food chicken pot pie is one of them, the filling is so creamy and the pie crust gives it that perfect buttery bite, I'm getting hungry just thinking about it. I also make the crust from scratch it's so easy and divine you wouldn't want to buy a premade crust again.

Ingredients

1/2 cup of butter

1/2 cup of flour

3-4 cups of chicken stock (low sodium)

3 cups of shredded chicken preferable thigh

3 cups of frozen mixed vegetables

1 cup of mushrooms

1/2 cup of heavy cream

3 cloves of crushed garlic

1/2 Fresh grated nutmeg or 1 tsp

1 tsp of fresh thyme or 1/2 tsp of dry thyme

2 tsp Garlic powder

Salt to taste

Directions

Melt butter in the pot add garlic and mushrooms, cook down, mix in flour till it becomes a roux, add in the chicken stock keep stirring till it thickens add vegetables, salt, garlic powder and at the end add the cream let it simmer then turn off the stove.

Pie Crust

1 1/4 cup flour

1 stick of salted cold cubed butter

1/4 cup of ice cold water

Directions

You need a food processor for this, pulse the flour and cold cubed butter till it starts getting distributed thru out the flour then add the water slowly while pulsing, the mixture will resemble wet looking sand which is what you need, get a parchment paper and pour all the mixture on it and form the dough into a disk, dont over work the dough. Then wrap it up and refrigerate it for 25 min and roll it out when ready to use.

Put the cooled mixture in a round pan then add the pie crust on top and crimp and give it an egg wash before baking. You can also make it a double crust one on the bottom layer then one on top.

Bake in a preheated 400 degree oven for 25-30 min till crust gets cooked and golden.
