Butter Chicken

Ingredients 2 lbs of cubed chicken breast or thighs or a mixture of both 2 heaping tbsp of yogurt 1 1/2 tsp of coriander 1 tsp of garlic powder 2 tsp of paprika 1 1/2 tsp of chili powder 1 1/2 tsp of ginger powder 2 tsp of garam masala Salt to taste 4 gloves of garlic made in a paste 6 off the vine tomatoes 2 tsp of ginger paste or fresh ginger 1 chopped onion 4 cloves of garlic made in paste for the sauce 1/4 cup of cashews 6-7 tbsp of salter butter 1/4 cup of heavy cream Cilantro for garnish Oil for cooking Directions Marinate the chicken with the yogurt, garlic paste and all the spices mentioned above for 30 minutes. In a hot skillet add a little oil and 2 tbsp of butter, brown the chicken on each side till its full cooked. Remove the chicken from the pan and add another tbsp or 2 of butter, then add the chopped onions, garlic, ginger and saute, then add chopped tomatoes. Cook for 10 min or till tomatoes are tender. Cool the mixture slightly and add in blender and blend till smooth add water if mixture is to thick. Strain the sauce to make it smooth back in the same pan add another 2 tbsp of butter. Then add your chicken. Taste for salt then add your heavy cream. Let it simmer for a few minutes. Turn off the heat and garnish with cilantro at the end. Serve with naan bread or rice! Enjoy.
