Avocado Cilantro dressed Quinoa

I'm going to focus more on the dressing in this post, because you can use any healthy toppings of your choice and will still be delicious.

I love avocados so much even my children love it they actually prefer this avocado sauce over marinara sauce. The freshness of the cilantro, the tanginess from the lemon and the creaminess from the avocado makes it the perfect dressing/sauce on anything! This dressing is so versatile you can use this dressing on pasta, chicken, fish, salad, steak, etc. Who said healthy has to be boring.

This is a superfood bowl that you will love!

Ingredients

1 cup of Quinoa

1 avocado

1/2 cup of plain yogurt

1 big lemon

2 cloves of garlic

2 tbsp olive oil

1 cup of cilantro

Salt to taste

Water to thin the sauce (couple of tbsp)

2 cups of preferred stock (optional)

1/2 avocado for topping

2 cups of sliced mushrooms

1 Roma tomato

2-3 cups of baby spinach

Red onion for garnish

Sliced/slivered toasted almonds

1 tbsp olive oil

1 tsp garlic powder

2-3 servings

Directions

Rinse off the Quinoa in a mesh strainer and saute in one tbsp of olive oil add a tsp of salt and 1 tsp of garlic powder, then add 2 cups of water, if using 2 cups of stock skip the salt and water.

Let the Quinoa cook for 15-20 min fluff with a fork set aside.

Prepare your favorite toppings, or if you're following this recipe just saute mushrooms and spinach separately and set aside.

Slice, tomato, red onion and an avocado squeeze lemon, a little salt, and red pepper (optional). Toast almonds set aside.

Now for the best part the dressing, add all the ingredients, avocado, yogurt, garlic, cilantro, salt and lemon, olive oil in a blender and blend well, if the sauce is too thick thin out with a little water.

Add as much sauce you like to the Quinoa, and set the left over dressing in the refrigerator for the next day, top the Quinoa with your toppings and serve, can be eaten warm or room temperature.
