Atayef is one of the most popular middleeastern desserts during the month of Ramadan. Atayef is one of those desserts that reminds me of home in Palestine. They are sold on every street corner, the lines backed up so far people waiting to place an order, the fumes of atayef are everywhere and all you can think of is when is it time for iftar to have one. Atayef is a staple at every Palestinian/Middle eastern household.
I call them the Arabian pancake, it basically cooks and looks and smells like one, but these are only cooked on one side and you have to wait till the other side is cooked.

After they are cooked they are filled with a cheesy or a walnut filling, then baked till perfection and dipped into ater (simple syrup), and served warm! Do I need to say more, I mean with a cup of coffee its the perfect way to end your day!

Ingredients
1 cup flour
1/2 cup smeed (semolina)
1 tsp yeast 1 tsp baking powder
1 cup warm milk 1 cup warm Water
1 tbsp sugar
Mix everything together in a blender
Let it is sit 20-30 min
Remix when ready to use and pour them on a heated nonstick griddle on medium heat and make them like you're basically making a pancake but don't flip them the other side will bubble and cook thru.
Directions
After making the atayif preheat your oven to 400 degrees, and fill them with your favorite filling, at our household we mix half sweet cheese with half fresh mozzarella, a dash of cinnamon and nutmeg, and for walnuts a handful of walnuts, a dash of cinnamon, a tbsp of shredded cocunut, 1 tsp sugar, a dash of cinnamon and nutmeg.
Make sure you butter the atayif before baking and when done drizzle them with ater (simple syrup). And serve
Ater (Simple syrup)
1 cup of sugar
1 1/2 cup of water
1 tsp of orange blossom water
Mix in a pot and let the syrup come to a simmer and wait till it thickens about 8 minutes then turn off the heat and let it cool
